The chocolate crepes I made last week for the scavenger hunt photo were fabulous. I've made crepes before but I was still surprised at how easy they come together. Here's the recipe.
Chocolate Banana Crepes
1.5 cups flour
1/2 cup cocoa powder
1/4 cup sugar
2 tablespoons melted butter+extra for frying pan
2 cups milk
1/2 tsp vanilla
2/3 cup chocolate chips or chopped chocolate
1/2 cup milk
Make the ganache first. Bring the milk to a boil and pour it into a bowl of chocolate. Stir to melt. Place the bowl in a cool place to thicken it up a bit.
For the crepes, mix together the dry ingredients in one bowl. Mix the wet ingredients together in another bowl. Add wet to dry. Whisk until smooth. You are supposed to refrigerate the mix until chilled but I never do.
Heat a frying pan up over medium heat and brush with a thin layer of butter. Pour 1/4 cup of the batter into the pan and swirl to spread it out into a larger circle. Cook until the bottom is golden about 35-40 seconds. Flip and cook the other side for another 10-15 seconds.
Spoon some ganache in the middle of each crepe. Top with sliced bananas then roll them up. Top with whipped cream.
